Grilled Tequila Shrimp Soft Tacos
2 pounds of tail-on raw, deveined shrimp 2 tablespoons tequila 2 avocados 3 tomatos 2 limes I Bunch scallions 2 jalapeƱos 1 bunch cilantro 3 tablespoons Olive oil 2 cloves crushed garlic 1 teaspoon crushed red pepper
  1. Defrost shrimp and season them with crushed garlic, olive oil, tequila, crushed red pepper and salt, refrigerate.
  2. Chop all toppings like so:
  3. Grill shrimp until they make the shape of a C – for “cooked”. Shrimp that close into an O are “overcooked” and those still shaped as a U are “undercooked!”

    This should only take a few minutes per side .
  4. As shrimp are grilling warm tortillas in the microwave
  5. I serve everything on a platter and let people compile their own, I like mine with a little of everything and a squeeze of lime on top.
