Avocado Tomato & Scallion Soft Tacos with Grilled Tequila Shrimp

One of my favorite easy summer dinners are these delicious build-your-own grilled shrimp soft tacos. They are healthy, delicious and easy to make.

I make mine with avocado, tomato, cilantro, jalapenos, and scallions and then add spicy garlicy grilled shrimp that are splashed with tequila before hitting the grill. The combination of flavors and textures is heavenly. I usually serve these with a side of re-fried black beans heated up straight from the can, maybe with a little shredded cheddar on top.

The only special tool I use to make this meal is this grilling basket for the shrimp.  I use it because I hate when i lose shrimp into the grill and this keeps them safely on top. Also its nice and easy to do one big flip by turning the basket over rather than to turn each shrimp individually to grill both sides. I like it better than the type of grill basket with all the little circle holes because the flame can really touch the shrimp so they truly grill, and don’t steam.

Grilled Tequila Shrimp Soft Tacos
2 pounds of tail-on raw, deveined shrimp 2 tablespoons tequila 2 avocados 3 tomatos 2 limes I Bunch scallions 2 jalapeños 1 bunch cilantro 3 tablespoons Olive oil 2 cloves crushed garlic 1 teaspoon crushed red pepper
Instructions
  1. Defrost shrimp and season them with crushed garlic, olive oil, tequila, crushed red pepper and salt, refrigerate.
  2. Chop all toppings like so:
  3. Grill shrimp until they make the shape of a C - for "cooked". Shrimp that close into an O are "overcooked" and those still shaped as a U are "undercooked!"

    This should only take a few minutes per side .
  4. As shrimp are grilling warm tortillas in the microwave
  5. I serve everything on a platter and let people compile their own, I like mine with a little of everything and a squeeze of lime on top.
